Arctic Expedition 4

We took the 3 hour flight to Copenhagen, Denmark, then ran for the train to Lund, Sweden.
Our girl, Linnea is in medical school at the university there. She invited us to stay a couple nights, and see what her life is like, and we jumped at the chance.

We had such a nice time, catching up with Linnea. Walking through this beautiful town, soaking up the history. Enjoying the vibrant atmosphere of a college town. She made her famous Kladdkaka with coconut topping. I ate almost the whole cake.
There was shopping, a museum, a concert, pizza dinner, the church, her school, and she even invited us to medical student's clubhouse for their Thursday luncheon.

Apparently the Swedes think cowboys put lots of fresh veggies, walnuts, gorganzola, and dried cranberries on their burgers. Yep, lots of that on the old chuck wagon.

The concert at Lund University

Pea soup at the clubhouse for the medical students.  On Thursday and Sunday the students get served yellow pea soup with lots of fixings.  The table is full of mustards, leeks, thyme and salt for the soup.  Then there are jams, creams and butter for the "pancakes", which are a lot like crepes.  They serve a lighter beer, 2.1 % alcohol, and coffee too.  It's a chance for the students to get at least two hot meals a week during the intensive studies, and judging by all of the shuffling, grabbing and hustling to get food, that's exactly what it is.
The church is fairly new, by Swedish standards.  It was built in the 1100's.  Everything is so beautiful, especially the way the light falls through the windows.  The basement is a burial catacomb, and the pillars are carved to enhance the light coming through the windows.  It is so peaceful and lovely, such a great final resting place.

On our way back, we stopped at the greenhouse at the botanical garden.  It was fun to see cactuses, bromyliads and geckos and frogs in the middle of winter in Sweden.  Then we met Josefine, who picked us up and drove us east to Ahus.
